Happy Pancake Tuesday! Shrove Tuesday is probably one of the best days of the year – it’s a day when no one is going to judge you for devouring ALL the pancakes. Okay, so maybe some people will judge you if you only eat pancakes today, but screw them, it’s pancake day and that means we can eat pancakes goddammit! So in honour of Pancake Day, I wanted to share with you a delish recipe for DOUBLE CHOC pancakes! Because why have boring, plain pancakes when you can really indulge today with these scrumptious pancakes! So what is Shrove Tuesday and why do we also know it as Pancake Day? I’ll be honest, my knowledge of Shrove Tuesday is pretty minimal, and even back in school when we used to make pancakes there was never really any discussion, I think, about why the hell we were making pancakes to begin with. That could also be because I went to a public school, and while we did have scripture lessons, we weren’t discussing religious practices on a daily basis. Shrove Tuesday is a Christian observation that takes place the day before Ash Wednesday, which is the first day of Lent. Lent lasts for 40 days, until Easter, and is when people traditionally fast for the period, refraining from indulging in food that would give undue pleasure. So that meant no meat, no dairy and no eggs. Today, a lot of people tend to give up one thing for Lent, like no chocolate, no alcohol, no smoking, etc, but there are no doubt devote Christians who still practice Lent in the traditional sense. So Shrove Tuesday was the last day for people to use up their eggs, milk and sugar before fasting began. And what food uses eggs, milk and sugar? PANCAKES! Honestly, I’d prefer Cake Day, but Pancake Day is better than nothing. And while I, like many people, won’t be partaking in Lent, it doesn’t mean we have to skip celebrating Shrove Tuesday. Like Easter and Christmas and how they’ve become mainstream and commercialised holidays for many people around the world, so too has Shrove Tuesday descended to become more commonly known as Pancake Day for a lot of people. Enough about the origin of Pancake Day – let’s get to the actual pancakes! what you'll need:
Note: I ended up doubling the mix when I made it for this post, although I still only used one packet of chocolate chips, hence why there’s two eggs in the photo above. how to make them: In one bowl, whisk the milk, egg and vanilla together and set aside. In another bowl, sift the flour, bicarbonate and cocoa powder, stirring in the sugar. Mix the wet ingredients into the dry, along with the melted butter, using a whisk help to remove any lumps. Add in the chocolate chips, stirring to distribute them in the mix. Make sure the mix can be easily poured/ladled – you may need to add a little more milk if it’s a little too thick. Heat your non-stick fry pan, greasing it with a little spray oil or butter (don’t overdo it). Spoon mixture into the pan, about ¼ cup per pancake (or whatever size you desire – you want a massive pancake that takes up the whole pan? Go for it!). Let them cook on one side for 3-4 minutes or until bubbles appear on the surface. Carefully flip and cook for a further 3-4 minutes until browned. Repeat for the rest of the mix and serve warm. You can either eat these on their own, with a drizzle of chocolate sauce/melted chocolate, or even maple syrup if you’re feeling adventurous! And you know what would go well with these pancakes and the chocolate sauce? Strawberries! The great thing about pancakes in general, but especially these double choc ones, is that they’re also great cold! Need a midnight snack? These pancakes cold is a pretty damn good one! And just like that you’ve marked Shrove Tuesday in the best way possible! Now excuse me while I go whip up a batch of pancakes and devour them all (okay, so maybe I’ll share one or two...).
