Happy Hump Day Fam! Can you believe Christmas is only NEXT WEEKEND – in 11 days to be exact! It might be coming at us like a freight train, but there is still plenty of time to cram in all those last-minute things, like stocking up on ALL the snacks! This year, one of the snacks I’m cooking up is Nuts & Bolts, a delicious and moreish snack to have on the table, taking to a Christmas party, or gifting in a jar. It’s a pretty quick and easy snack to whip up, so if you’re looking for a little something different on your nibbles table this year, and don’t have a lot of time left to make something, this could be the thing you’re looking for! Now I do have to admit, Nuts & Bolts are hardly the most festive snack to make. In fact, they’re not Christmas-y at all. BUT, my mum used to make it a LOT around Christmas time while I was growing up, so I now kind of just associate the two. But even though they aren’t strictly a Christmas nibble, they are delicious, and that’s really all that matters! WHAT YOU’LL NEED:
* I use mixed nuts because I like having the variety, but feel free to use just peanuts or a combination of whichever nuts you prefer – just make sure whatever you use adds up to 375g! HOW TO MAKE IT: Start by placing the Nutrigrain and nuts into a large bowl. In a separate bowl, mix together the soup mixes and powders. Warm the oil in a saucepan over medium-low heat, stirring through the flavour mixture. Pour the flavoured oil over the cereal-nut mixture, and stir to coat everything. I actually have two large bowls that are the same size, so I used one bowl as a lid and shook the ingredients until everything was coated. Spread the mixture out in a shallow baking tray and bake in the oven for 1 hour on 100°C. Give the mix a stir about halfway through baking. Remove from oven and allow to cool before storing or serving. Note that the nuts can be a little hot if you go to eat them straight away! And voila! You’ve made Nuts & Bolts! As I said at the top of this post, Nuts & Bolts is a super quick and easy snack to make, whether it be at Christmas time, for your next party, going camping, or just a casual Sunday afternoon.
