Happy Sunday Friends! Did you know that January 22 is Blondie Day? Because it is! I don’t know about you, but I’ve got a pretty substantial sweet tooth, so when I made some white chocolate brownies recently, I thought I better share them with you guys too! Brownies are delish, but if I can white chocolate-ify something, I’m going to do it! Now, blondies and white chocolate brownies aren’t really the same thing, but they’re pretty damn close and both taste delicious, hence why I’m sharing a brownie recipe on blondie day. So preheat your oven, get out the mixing bowl, and let’s get cooking! So blondies don’t actually require any chocolate like a brownie does, unless you’re adding in chocolate chips for a fun flavour twist. Like a regular brownie, white chocolate brownies require melted chocolate to create the fudgey and indulgent delicacy we all know and love. All three are pretty much cousins, making it really easy to confuse a blondie and white chocolate brownie. At the end of the day, they’re all scrumptious, which is the most important thing! WHAT YOU'LL NEED:
* I ended up using another block of white chocolate, roughly chopped for a nice chunky rustic look. While I do recommend including the chocolate chips, they’re not essential if you want to skip them, or substitute with other inclusions like nuts. HOW TO MAKE IT: Start by preheating your oven to 165°C, and lining a 9x9” baking tin. Combine the butter and white chocolate in a microwave-safe bowl, heating until melted and smooth. Put to one side. In a separate bowl, whisk sugar, eggs and egg yolk until pale and smooth. Stir in vanilla and white chocolate mix until combined. Stir in flour and baking powder until thoroughly combined. Fold in chocolate chips. Bake for 42 minutes until golden brown. Leave to cool in the baking tray before turning out and cutting. And voila! You’ve got the yummiest white chocolate indulgence to snack on! My mouth is watering just writing this post, so I’m going to leave it there and go and grab a piece of brownie…
